You cannot just “drive it with an Arduino”. You need to drive the gate above Vgs-threshold 2. You show the easy part.
Biasing and driving is the tricky part: I will recommend two for you: I did a search for LTC and it’s out of my budget. Would it work if I used potential dividers with 1k or 10k resistors and read it with the analog inputs of my Arduino? A voltage divider will not work due to the potential difference between the Arduino and you circuit.
